Making Dinner

I’m doing it! I’m making dinner! Well, at least part of it. My hubby is going to throw the chicken on the BBQ while I put Tikka to sleep but I have made the marinade and will make a pasta side dish and corn. WOOHOO!

The noodles I am making are famous in my extended family. My aunt Judy makes them regularly and they are to die for and so simple! I found her recipe that she posted on Short Cut Cook so I am linking to that.

Judy’s Spicy Noodles

1 lb linguini – use Angel Hair but any pasta works well.
1/2 cup chinese sesame oil
1/2 cup soy sauce (use lite if you prefer)
2 Tablespoons hot chili oil
2 tsp minced garlic
salt and pepper to taste

toasted sesame seeds (if you have the time and energy)

I also add two table spoons of creamy peanut butter and put grilled chicken on top- YUM!

Prepare linguini according to packaged directions. Combine the remainder of the ingredients and toss with the cooked linguini. Serve hot or cold. Even kids love this one.

So, I’m getting dinner on the table. Aren’t you proud of me!?

I should add- I also got laundry folded and put away and the majority of packing done for little T, went for a workout and an hour long walk AND managed to write this post. 🙂 Yay me.
